Saffron pappardelle from ‘Al Gatto Nero’ with Spanner crab, cherry tomatoes, aromatic fish sauce and smoked ricotta

This recipe is close to my heart,” says Greg Feck, “we were in Venice in February this year for Carnivale and we visited the restaurant Al Gatto Nero and loved this dish, in particular.”.

Method

To cook the pasta:

Fresh pasta will only take 2 minutes.

Dried pasta will be about 6-8 minutes, follow cooking instructions on the packet.

In a pan, sauté the cherry tomatoes with the chilli and garlic and a touch of olive oil.

Add the wine and fish stock and season with salt to taste. Add the crab meat and cook for no longer than a minute, add the pasta, tossing regularly so the sauce coats the pasta, add parsley and serve immediately.

Grate some smoked ricotta over the top to finish.

Kiwi-born Greg Feck is now a dedicated Melburnian. He been cooking professionally for over 25 years and spent several years in London, working as Sous Chef under Jamie Oliver and Ben O’Donoghue. During this time he made countless trips to Venice, falling in love with the culture, the beauty and of course the food of the city.

He and his partner Kim Coronica, owned and operated acclaimed ‘Crabapple Kitchen’ in Hawthorn for over 6 years. With third business partner David Wickwar, they opened ‘Vaporetto Venetian Bar and Eatery’ in Hawthorn just over two years ago; owning Vaporetto is a realization of a dream for Greg ever since those inspirational trips to Venice.
